This is a quick update from our trip to the south of France, to mention some of the most outrageous, and certainly some of the best wines we've ever had the privilege to try.
Stéphane Serre has a tiny parcel of vines (above) in dramatic surroundings in the Corbières hills. He makes a variety of cuvées from old vines, with meticulous care and attention.
Micro production (mini tanks, salvaged from an old laboratory), fanatic attention to detail (his top wine doesn't just mention how many bottles were produced, mere hundreds, but how many man hours went into it and how many individual grapes), and avant-grade techniques (crio-fermentation). Miraculous flavours. Awe inspiring wines.
